In a Giant Hat, we have found that two bars of pin spot lights pointing downwards to produce pools of light on tables, dancefloors or other features works well when combined with three uplighters shining up into the apex.  All the lights hang from the tent cross-bars about 3 metres above the ground, and are controlled by dimmer (one dimmer per tent). 

Other options include a mirror ball hung over a dancefloor, globe lights around the open brim and flame torches outside the tents to add some drama.
